This is a coffee "benefacio" beside Lake Atitlan, in Guatemala. The coffee is dried in the sun after the fruity part is removed, leaving only the "seed" or bean inside. In Guatemala, these first steps in the process are usually performed immediately after picking, to preserve quality.
